If you dont mind taking a bit of a bus ride (a cultural experince in itself) then there are all sort of great places on the coast if you head south. I would personally suggest Agadir and Taghazout as I spent a week between the two and they blew me away (Taghazout more so as it was without ANY tourists). But i also enjoyed Essaouira as it had a cool and laid back atomosphere. This would be a little bit closer to Casablanca but also more touristy. There were several towns that I dont even remember the name of but would get off the bus and ask if anyone knew someone that would rent a room. I almost stayed in a beach city called Safi as it is supposed to have some decent surf but had locals recommend against it because of its rougher scene.
Casablanca isnt too far off from the city of Fez and the little town of Chefcouan (spelling??) where you wont run out of cultural excitement. If you stay inside the Old Medina (important to be inside the oldcity walls) I promise you wont be disappointed by the maze of narrow streets and colorful tanneries (there are some pictures on my profile).
I wish i knew more about the hiking scene up north to help you out. Im into both hiking and rock climbing and there is enough of both in Morocco.
