When visiting Sri Lanka, my wife and I have found that the best litmus test for how safe a given resturaunt is to eat at is not actually to find the one that looks like it should be clean. The best way in our experiences is to find a place that is packed with locals - if the food wasn't safe, they'd know not to come back. If it looks safe & clean but there are no locals eating at it, there's probably a reason for that. The only time we got sick from eating food was at the big-name international hotels...the "hole-in-the-wall" food stalls though NEVER gave us any problems!!
