i haven't done much backpacking in europe, but from my short time in Istanbul, I found the Taksim area in Beyoglu to be the most fun, with the most places to stay from high to low, and the most food, shopping, nightlife. The old city is great for site seeing during the day, but not much to do at night. hope that helps!
